I thought this week I would let everyone know what I do for a living now. It started out as a side hustle but became my passion and full-time, but not working full time, business. Two-and-one-half years ago I started on what I thought would be a diet to lose some weight and get my health back. At the same time I jumped in as a coach not having a clue what I was doing. But if I got a few people to join me I could pay for my health journey. But after jumping all in and seeing what this health program did for me and my husband I couldn’t help but shout it from the rooftops and help others find freedom in their health and financial freedom also.
Here are some reasons why I am a health coach.
I jumped all in at first just to help pay for my first box on our program, but that was just the start. After being on the program for 30 days, my life changed. I mean totally changed!
The energy I had was through the roof. I started to sleep better. My mind was clear. Then, fast forward 2 1/2 months in and I had to stop taking the insulin shots that I had been on for so many years. I was taking 4 shots a day. Now, I was feeling really good. Telling others was the logical next step.
I finally found something that just doesn’t say, “Here, do this” and not explain why. I finally found something that teaches you how and why you need to fuel your body. Becoming educated on health opened my eyes.
The more I learned about habits and their effect on our lives, I knew that sharing this information was critical to the wellbeing of so many around me. Dave and I got really serious and became certified in health coaching. We now run a professional health coaching business, and love every minute of it.
As a health client, our program taught me how to live again. Becoming a health coach showed me what was possible beyond weight loss. I was learning about financial freedom! Because of our health coaching practice, I was able to leave my day job at the newspaper and work from anywhere (even the beach).
Who knew that working remotely would become such a necessity in 2020? And yet, I was already doing that, thanks to health coaching.
I am able to spend more time with family. Anyone who knows me knows that family means the world to me. The freedom this health coaching practice has afforded me has meant that I can spend more time (and resources) creating memories.
I love to help people. It has been one of my passions for as long as I can remember.
As I gained control of my health, I wanted others to have the same experience I had. When I see the freedom health coaching is giving me, I want to share it with everyone.
We need to have a purpose that fulfills us and helps others. That’s what health coaching is doing for us.
The things we have learned by embracing our business have taught us how to dream. That doesn’t sound all that profound until you realize we fail to dream like we once did because we think dreams are now longer possible.
Well, any dream is possible if you do the work. Zig Ziglar says you can have everything you want if you help enough people get what they want. That is what health coaching is to me. I can’t help but shout it from the rooftops.We want to help people find freedom in their body, mind, and finances. That is why it is worth it. We are not just dreaming the dream, we are living it.
These are the reasons why I am a health coach. But it’s really not about my reasons. What are your reasons? Are you sick and tired of being sick and tired? Do you want to step into a purpose that helps people in amazing ways? What would you do with freedom in your health, your time, your finances? What are you willing to invest or sacrifice to achieve your dreams? Anything is possible. It truly is. You just have to take that first step.

Chicken Fajitas Casserole
Ingredients
Baked Chicken Breasts: I recommend making my Juicy Oven Baked Chicken Breasts for the best baked chicken! Or, you can always just use that rotisserie chicken from your local grocery store.
Olive Oil
Green Pepper
Red Pepper
Yellow Onion
Salt
Cream Cheese
Cheddar Cheese: I love using white and yellow cheddar for this recipe, but you can definitely opt for your favorite shredded cheese.
Fajita Seasoning Mix: You can’t go wrong with my 5 Minute Homemade Fajita Seasoning.
Salt & Pepper
Fresh Cilantro: Parsley works too! Use your favorite garnish.
Instructions
Preheat the Oven: Set your oven to 350˚F and lightly grease a 9×13 baking dish with cooking spray.
Shred Chicken: Shred the baked chicken breasts and then transfer to a large mixing bowl; set aside.
Heat Oil: Heat olive oil in a skillet set over medium-high heat.
Cook Peppers & Onions: Add peppers and onions to the hot oil; sprinkle with salt and cook for 4 to 5 minutes, or until softened. Remove from heat and add to the chicken. Set aside.
Make Seasoning: In a large bowl, combine cream cheese, half of shredded cheese, fajitas seasoning mix, salt, and pepper. Mix until thoroughly combined.
Add to Chicken: Add cream cheese mixture to the chicken and peppers; mix until everything is well combined.
Assemble: Transfer chicken mixture to previously prepared baking dish and sprinkle with remaining shredded cheddar cheese.
Bake: Bake for 25 to 30 minutes, or until hot and bubbly, and cheese is melted.
Garnish & Serve: Remove from oven and garnish with chopped cilantro or parsley.
