Mounds Brownies

My daughter, Carol has a sweet, special neighbor and friend, Ludy Harville. After getting to know her, she soon became my friend also. We bonded so well, she now calls me “Mom.”
On April 16, there was a golf tournament to help raise money for the Northwest Louisiana Pregnancy Care Center. A call went out to provide brownies and cookies for the participants. It was the perfect opportunity.to prepare this KEEPER brownie recipe that Ludy had given me, which I had wanted to try.

Lisa Gould who is the Executive Director was able to open the Minden Pregnancy Care Center 3 years ago. She had a long time passion for this project. It is a nonprofit organization. The Center provides an alternate choice over abortion. Some of the resources available are counseling, parenting classes, free doctor care referrals, STD testing, post abortion care, free pregnancy tests, adoption option information and a shop with donated items of pregnancy and baby supplies free to those in need of the various items.

Although the center receives a grant, it is not enough to cover all expenses and is dependent on donations and money raising events such as the golf tournament.

Lisa has one assistant and other than that must depend on volunteers. These volunteers as accorded by law must have sufficient training.

The Center is open three days a week, Monday, Tuesday and Thursday from 10 a.m. to 5 p.m. It is located at 1323 Sibley Road, Minden. Mailing address is P.O. Box 579, Minden, LA 71058, Telephone (318) 639-0907. Monetary donations and gifts for the store are welcome and greatly appreciated.

MOUNDS BROWNIES
(Recipe from the files of Ludy Harville)

1 Brownie Mix (9 X 13 inch size

Follow directions on box. As soon as you take brownies from oven, spread the almonds and Eagle Brand mixture over hot brownies.

EAGLE BRAND MIXTURE:

Whole almonds (Optional – my addition)
5 cups shredded coconut (I used only 4 cups)
1 (14 oz.) can Eagle Brand Condensed Sweet Milk

Place almonds strategically atop the cooked brownie. Mix the coconut and milk; spread this mixture over the brownie as directed above. Allow to cool.

TOPPING:

1 container Chocolate Frosting

Microwave just long enough to make the frosting pourable. Pour over the cooled brownie topped with the coconut mixture. Spread to seal edges.
