Rain, rain go away. I am having one of those weeks where you can’t get out of your own way because of this weather. Half of the time it’s cold, half of the time it’s warm, but non-stop raining can make a dreary day. I guess I need to count my blessings that it is not snowing, right?
It’s been a long time since I’ve had to shovel out snow to be able to go to work. I miss playing in the snow, but not everyday life.
This rain is wreaking havoc on our yard. We are trying to get things done and ready for the spring. It’s just not happening. Sometimes we have to play “Frogger” to just get to our house
because the potholes in the driveway are getting deeper and deeper.
I think it’s time to build an ark. But then I remember that God said he would not flood the earth again.
So now I am thinking about the positives of trying to get through this rainy season. Starting a new life journey has been an experience in itself.
I think this is the season of pruning and watering for us. We sure are doing a lot of watering. This will be our breakthrough year.
In times like this you have to do pruning and watering to get to the next level. We are learning what it takes to live above the line, have integrity, and move to the next level in our lives. We want to be the better person that we know we can be.
If life doesn’t challenge you then where are you really at in life? You always should be learning something new and challenging yourself each and every day no matter what you’re doing. But in the challenge you should be having fun.
So I say enjoy life as you’re going through, and challenge yourself to do something exciting. Challenge yourself to do something that makes you happy. Challenge yourself to do something that scares you. You’ve got this!
Also, pray that you’re operating in God’s will. I feel the happiest and the most fulfilled when I know I’m in the will of God.
So I challenge you today to think about your life and where you’re going. Make a purpose for yourself and do it — for you. Only you can make it happen. Only you can satisfy your needs. Push through the hard times because what’s on the other side is unbelievable!
Healthy Spinach Artichoke
Ingredients
4 (6-8oz) chicken breasts*
2 cups packed baby spinach, roughly chopped
1 cup plain low-fat yogurt
1 cup marinated artichoke hearts, drained and roughly chopped
1 teaspoon dijon mustard
1/2 teaspoon garlic powder
8 slices mozzarella cheese
Instructions
Preheat oven to 400ºF.
In a large bowl mix together spinach, yogurt, artichokes, garlic powder, and mustard.
Lay chicken breasts down in a single layer in a 9×13 baking dish. Evenly distribute spinach mixture overtop the chicken breasts. Lay 2 slices of the mozzarella cheese on top of each chicken breast, overlapping to fit is okay.
Transfer to the oven and bake 30 minutes until chicken is fully cooked (cooking time will vary due to size of the chicken breast, the chicken should reach an internal temperature of 165ºF). Let rest 3-5 minutes before serving.
